Creamy Chicken and Spinach Pasta Skillet

8 oz (225g) fettuccine pasta

2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken breasts, diced

Salt and pepper, to taste

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

2 cups fresh spinach, chopped

1 cup (100g) grated Parmesan cheese

½ teaspoon red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium-high heat, heat the olive oil. Season the diced chicken breasts with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Herbs: In the same skillet, add the minced garlic and dried Italian herbs. Sauté for about 1-2 minutes, or until fragrant.

        Add Broth and Cream: Pour in the chicken broth and bring to a simmer. Reduce the heat to medium-low, then stir in the heavy cream. Allow the mixture to simmer for about 2-3 minutes, thickening slightly.

          Incorporate Spinach: Add the chopped spinach to the skillet and stir until wilted, about 2 minutes.

            Combine Everything: Return the cooked chicken to the skillet. Add the cooked fettuccine and Parmesan cheese, mixing well to combine. If desired, sprinkle in the red pepper flakes for an extra kick. Cook for another 2-3 minutes until everything is heated through.

              Serve: Remove from heat and garnish with fresh parsley. Serve immediately, with extra Parmesan cheese on the side if desired.
