Creamy Buffalo Tofu Pasta

8 oz. pasta of your choice (penne or fusilli works great)

14 oz. firm tofu, pressed and cubed

2 tablespoons olive oil

1/2 cup buffalo sauce (adjust based on your heat preference)

1 cup heavy cream or coconut cream for a dairy-free option

1/2 cup vegetable broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup nutritional yeast (optional, for a cheesy flavor)

Fresh parsley or basil, chopped (for garnish)

Crumbled blue cheese or dairy-free cheese (optional, for garnish)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Prepare the Tofu: In a large skillet, heat the olive oil over medium heat. Once hot, add the cubed tofu. Cook for about 8-10 minutes, turning occasionally, until the tofu is golden brown and slightly crispy on all sides.

      Add the Sauce: Lower the heat and pour in the buffalo sauce, stirring gently until the tofu is well coated. Let it simmer for a couple of minutes to allow the flavors to meld.

        Make it Creamy: In a bowl, whisk together the heavy cream (or coconut cream), vegetable broth, garlic powder, onion powder, smoked paprika, salt, and black pepper. Pour this mixture into the skillet with the tofu. Stir to combine and let it simmer on low heat for about 5 minutes until the sauce thickens slightly.

          Combine with Pasta: Add the cooked pasta to the skillet, tossing everything together until the pasta is well coated with the creamy buffalo sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

            Finish with Nutritional Yeast: Stir in the optional nutritional yeast for added cheesy flavor. Taste and adjust seasoning if necessary.
