8 oz spaghetti or fettuccine

2 ripe avocados, pitted and peeled

1 cup fresh corn kernels (about 2 ears of corn)

2 cloves garlic, minced

1/4 cup fresh basil leaves, plus extra for garnish

1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)

2 tbsp olive oil, plus more for drizzling

Juice of 1 lime

Salt and pepper to taste

Crushed red pepper flakes (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Corn: Spread the fresh corn kernels in a single layer on a baking sheet. Drizzle with a little olive oil, sprinkle with salt, and roast in the oven for about 15-20 minutes, until slightly charred and golden. Stir halfway through for even roasting.

      Cook the Pasta: While the corn roasts, bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
