Ingredients

1 sheet of puff pastry (thawed)

8 oz Brie cheese (rind removed and cut into small pieces)

1 cup cranberry sauce (homemade or store-bought)

1/4 cup chopped pecans or walnuts (toasted)

1 egg (beaten, for egg wash)

Fresh thyme leaves (for garnish)

Black pepper (to taste)

Instructions

Preheat Your Oven: Preheat your oven to 400°F (200°C), ensuring it’s nice and hot for crispy bites.

Roll Out Puff Pastry: On a floured surface, roll out the thawed puff pastry sheet to about 1/8-inch thickness. Cut it into squares, approximately 3x3 inches.

Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent sticking.

Assemble Bites: Place a puff pastry square on the baking sheet. Add a piece of Brie cheese in the center, followed by a dollop of cranberry sauce (about 1 teaspoon) on top of the cheese.

Add Nuts: Sprinkle a small amount of the chopped toasted nuts over the cranberry sauce for added crunch and flavor.

Fold the Pastry: Carefully fold the corners of the puff pastry square towards the center to create a bite-sized parcel. Pinch the edges gently to seal. Repeat this process for all pastry squares.

Egg Wash: Brush the tops of each pastry bite with the beaten egg. This will give them a beautiful golden color when baked.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the pastry is puffed and golden brown.

Cool and Garnish: Remove from the oven and let cool slightly. Before serving, sprinkle fresh thyme leaves on top for a pop of flavor and color, and add a light dusting of black pepper to taste.

Serve: Transfer the bites to a serving platter. These can be served warm or at room temperature. Enjoy your delightful Cranberry Brie Pastry Bites!
