1 tablespoon olive oil

1 medium onion, diced

2 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

4 cups low-sodium chicken broth

2 cups cooked chicken, shredded (rotisserie works great!)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

2 cups egg noodles

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: A squeeze of lemon juice

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and sliced celery. Sauté for about 5 minutes, or until the vegetables start to soften.

    Add Garlic: Stir in the minced garlic and cook for an additional minute, just until fragrant.

      Pour in the Broth: Add the chicken broth to the pot, followed by the shredded chicken, dried thyme, oregano, and bay leaf. Bring the mixture to a gentle simmer.

        Cook the Noodles: Once the soup is simmering, add the egg noodles. Cook for about 8-10 minutes, or until the noodles are tender.

          Season: Taste the soup and season with salt and pepper as needed. If desired, add a squeeze of lemon juice for brightness.
