Cold Pasta Salad with Cherry Tomatoes

8 oz (225 g) fusilli or rotini pasta

1 pint (300 g) cherry tomatoes, halved

1 cup (150 g) cucumber, diced

½ cup (75 g) red onion, finely chopped

½ cup (75 g) black olives, pitted and sliced

½ cup (75 g) fresh mozzarella balls, halved

½ cup (15 g) fresh basil leaves, torn

¼ cup (60 ml) extra virgin olive oil

2 tbsp red wine vinegar

1 tbsp Dijon mustard

1 tsp garlic powder

Salt and pepper to taste

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fusilli or rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Let it drain well.

    Prepare the Vegetables: While the pasta is cooling, prepare the vegetables. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced black olives, halved mozzarella balls, and torn basil leaves.

      Make the Dressing: In a small mixing bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper until well combined.

        Combine Ingredients: Once the pasta is cooled and drained, add it to the bowl with the vegetables. Pour the dressing over the pasta and vegetables. Toss everything gently until evenly coated.

          Chill: Cover the pasta salad with plastic wrap or transfer it to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld.

            Serve: Before serving, give the pasta salad a gentle toss to redistribute the dressing. Taste and adjust seasoning if necessary. Garnish with additional fresh basil if desired.
