1 can (15 oz) chickpeas, drained and rinsed

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/3 cup Kalamata olives, pitted and chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh dill, chopped

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon lemon juice

1 teaspoon dried oregano

Salt and pepper, to taste

4 large whole wheat wraps or lettuce leaves (for a low-carb option)

Instructions
 

Prepare the Chickpea Salad:

    - In a large mixing bowl, combine the drained chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, and chopped Kalamata olives.

      - Gently mix in the crumbled feta cheese, fresh parsley, and fresh dill.

        Make the Dressing:

          - In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper until well combined and emulsified.

            Combine:

              - Pour the dressing over the chickpea mixture. Toss everything together until all the ingredients are evenly coated with the dressing. Adjust seasoning if necessary.
