Cold Chicken & Bacon Pasta Salad

8 oz (225 g) penne pasta

1 cup cooked chicken breast, diced (rotisserie chicken works great)

6 strips of bacon, cooked crispy and crumbled

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup frozen peas (thawed)

1/4 cup fresh basil, chopped

1/2 cup mayonnaise

1/4 cup Greek yogurt

2 tablespoons lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Optional: grated Parmesan cheese for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Once cooked, drain and rinse under cold water to cool down the pasta. Set aside.

    Prepare the Bacon: Cook the bacon strips in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon into bite-sized pieces.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, diced chicken, crumbled bacon, cherry tomatoes, cucumber, red bell pepper, red onion, frozen peas, and fresh basil. Gently toss until everything is mixed.
