8 oz (about 227g) whole wheat or gluten-free pasta spiral (such as fusilli)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, roughly chopped

1 medium cucumber, diced

1/2 cup ripe avocado, diced

1/4 cup kalamata olives, pitted and sliced

1/4 cup red onion, finely chopped

1/4 cup extra virgin olive oil

2 tbsp balsamic vinegar

1 clove garlic, minced

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente (usually about 8-10 minutes). Drain and rinse under cold water to cool completely. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper until fully combined. Adjust seasoning to taste.

      Mix the Veggies and Cheese: In a large mixing bowl, combine the cherry tomatoes, fresh mozzarella, chopped basil, diced cucumber, diced avocado, sliced olives, and red onion. Gently mix to incorporate all the ingredients.

        Combine Pasta and Dressing: Add the cooled pasta to the bowl of vegetables and cheese. Pour the dressing over the mixture and toss gently until everything is well-coated.

          Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold, garnished with additional basil leaves if desired.
