Classic Roasted Tomato Bruschetta

6 ripe Roma tomatoes, halved and seeds removed

3 cloves of garlic, minced

1/4 cup extra virgin olive oil

Salt and freshly ground black pepper, to taste

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/4 cup finely chopped fresh basil, plus more for garnish

1 French baguette or Italian bread, sliced diagonally

1/2 cup grated Parmesan or crumbled feta cheese (optional)

A drizzle of balsamic glaze (for finishing, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tomatoes: In a large mixing bowl, combine the halved tomatoes, minced garlic, olive oil, salt, pepper, balsamic vinegar, thyme, and 1/4 cup of basil. Mix well to ensure all tomatoes are evenly coated.

      Roasting: Spread the tomato mixture in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until the tomatoes are soft and slightly caramelized.

        Toast the Bread: While the tomatoes are roasting, arrange the sliced baguette on a separate baking sheet. Brush each slice with olive oil and sprinkle with salt. Toast in the oven for about 5-7 minutes or until golden brown and crispy.

          Assemble the Bruschetta: Once the tomatoes are done roasting, remove them from the oven and let them cool slightly. Spoon the roasted tomato mixture generously onto each toasted bread slice.

            Add Cheese: If desired, sprinkle grated Parmesan or crumbled feta cheese over the top of each bruschetta for an extra layer of flavor.

              Garnish: Finish with a sprinkle of freshly chopped basil and a drizzle of balsamic glaze if using, for a touch of sweetness.
