1 lb ground beef (80/20 for optimal flavor)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup shredded cheddar cheese

½ cup sour cream (optional)

Fresh cilantro leaves for garnish

For the Fresh Salsa:

2 ripe tomatoes, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and minced (adjust for spice preference)

1 lime, juiced

2 tablespoons fresh cilantro, chopped

Salt, to taste

Instructions
 

Prepare the Fresh Salsa:

    - In a medium bowl, combine diced tomatoes, red onion, minced jalapeño, lime juice, and chopped cilantro.

      - Season with salt to taste and mix well. Set aside to allow flavors to meld while you prepare the tacos.

        Cook the Beef:

          - In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

            - Add the minced garlic and cook for another 1 minute until fragrant.

              - Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spatula, about 6-8 minutes.

                - Drain excess fat if necessary, and then stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 2 minutes until the spices are well incorporated. Remove from heat.

                  Warm the Tortillas:

                    - In a separate dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable. You can also wrap them in aluminum foil and warm them in the oven at 350°F (175°C) for about 10 minutes.
