2 tablespoons granulated sugar

2 teaspoons active dry yeast

2.5 cups all-purpose flour

½ teaspoon salt

3 tablespoons unsalted butter, melted

¼ cup baking soda

1 large egg, beaten

½ cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Coarse sea salt (for finishing)

Instructions
 

Activate the Yeast: In a mixing bowl, combine the warm water, granulated sugar, and yeast. Let it sit for about 5 minutes until foamy.

    Make the Dough: Once foamy, add the melted butter and salt to the yeast mixture. Gradually add the flour while mixing until a dough forms. Knead on a floured surface for about 5 minutes until smooth and elastic.

      First Rise: Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

        Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

          Shape the Pretzel Bites: Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a rope about 1 inch thick. Cut into 1-inch pieces to create bite-sized pretzel chunks.
