Chocolate Covered Strawberry Protein Bites

Ingredients
  

1 cup fresh strawberries, hulled and halved

1 cup chocolate protein powder (your favorite brand)

1/2 cup almond flour

1/4 cup honey or maple syrup

1/4 cup creamy almond butter (or peanut butter)

1/2 tsp vanilla extract

1/4 tsp salt

1 cup dark chocolate chips (for coating)

1 tbsp coconut oil (for melting chocolate)

Optional: crushed nuts or shredded coconut for garnish

Instructions
 

Prepare the Strawberry Filling: Start by washing and hulling the strawberries. Pat them dry with a paper towel to ensure no moisture affects the filling. Set aside.

    Make the Protein Bite Mixture: In a mixing bowl, combine the chocolate protein powder, almond flour, honey (or maple syrup), almond butter, vanilla extract, and salt. Mix thoroughly until a dough-like consistency forms. If the mixture is too crumbly, add a little water or almond milk, one tablespoon at a time, until well combined.

      Form the Bites: Take about a tablespoon of the protein mixture and flatten it in your palm. Place a halved strawberry in the center and wrap the mixture around it, forming a ball. Ensure the strawberry is completely enclosed. Repeat this process with the remaining mixture and strawberries. Arrange the protein bites on a parchment-lined baking sheet.

        Chill the Bites: Place the baking sheet with the protein bites in the freezer for about 30 minutes to firm up.

          Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

            Coat the Protein Bites: Remove the protein bites from the freezer. Using a fork, dip each protein bite into the melted chocolate, ensuring it’s well-coated. Allow excess chocolate to drip off, then place the coated bites back onto the parchment-lined baking sheet.

              Garnish (Optional): If desired, sprinkle some crushed nuts or shredded coconut on top of the chocolate while it’s still wet for added texture and flavor.

                Chill Again: Return the coated bites to the freezer for another 15-20 minutes to allow the chocolate to harden.

                  Serve and Enjoy: Once the chocolate is set, take the protein bites out of the freezer. They can be stored in an airtight container in the fridge for up to a week or in the freezer for longer.
