2 cups fresh or frozen cherries, pitted

1 cup granulated sugar, divided

1 tablespoon lemon juice

1 cup almond meal (or finely ground almonds)

1/2 cup unsweetened shredded coconut

1/2 cup rolled oats

1/2 teaspoon sea salt

1/4 cup melted coconut oil

1/2 teaspoon vanilla extract

1 cup Greek yogurt or dairy-free yogurt (for a creamier layer)

Optional: Mint leaves for garnish

Prepare the Cherry Mixture: In a medium saucepan, combine the cherries, 1/2 cup of granulated sugar, and lemon juice. Cook over medium heat for about 10 minutes, stirring occasionally, until the cherries soften and release their juices. Remove from heat and let it cool slightly.

    Make the Crust: In a large mixing bowl, combine almond meal, shredded coconut, rolled oats, sea salt, the remaining 1/2 cup of sugar, melted coconut oil, and vanilla extract. Mix until all ingredients are well incorporated and form a crumbly texture.

      Assemble the Bars: Line an 8-inch square baking dish with parchment paper, allowing it to hang over the edges. Press two-thirds of the crust mixture evenly into the bottom of the dish to form a base layer. Spread the cooled cherry mixture evenly over the crust. Top with dollops of Greek yogurt, smoothing it out gently. Crumble the remaining crust mixture on top of the yogurt layer.

        Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours or until fully chilled and set.

          Serve: Once chilled, lift the bars out of the dish using the parchment paper. Slice into squares and serve. Garnish each bar with a mint leaf if desired for an extra touch.
