2 ripe avocados, peeled and pitted

2 cups frozen peas (thawed)

2 cups vegetable broth

1 cup fresh cilantro leaves

1/2 cup Greek yogurt (or a dairy-free alternative)

2 tablespoons lime juice

1 tablespoon olive oil

1 clove garlic, minced

Salt and pepper to taste

Optional garnishes: sliced radishes, microgreens, and a drizzle of olive oil

Instructions
 

In a blender or food processor, combine the avocados, thawed peas, vegetable broth, cilantro, Greek yogurt, lime juice, olive oil, and minced garlic.

    Blend the mixture on high speed until smooth and creamy, scraping down the sides as needed to ensure all ingredients are well incorporated.

      Taste the soup and season with salt and pepper to your liking. Blend again briefly to mix.

        Once blended, transfer the soup to a large bowl or container. Cover and refrigerate for at least 1 to 2 hours until chilled.

          When you’re ready to serve, stir the soup gently. If it’s too thick, add a splash more vegetable broth to reach your desired consistency.
