2 cups canned chickpeas (drained and rinsed)

2 tablespoons olive oil

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon cumin

1/4 teaspoon cayenne pepper (adjust based on spice preference)

Salt and pepper to taste

1/4 cup crumbled feta cheese (optional)

1/4 cup diced cucumbers

1/4 cup cherry tomatoes, halved

Fresh parsley or cilantro for garnish

Mini tortilla cups or healthier cucumber “cups” for serving

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare Chickpeas: On a clean kitchen towel, spread out the drained chickpeas and pat them dry to remove excess moisture. This step will help them crisp up nicely when roasted.

      Season Chickpeas: In a large mixing bowl, combine the dried chickpeas, olive oil, chili powder, smoked paprika, garlic powder, cumin, cayenne pepper, salt, and pepper. Toss until all chickpeas are evenly coated with the spice mixture.

        Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, stirring midway, until they are golden brown and crispy.

          Prepare the Cups: While the chickpeas are roasting, prepare your serving cups. If using tortilla cups, arrange them on a serving platter. If using cucumber cups, slice cucumbers into thick rounds and scoop out some of the center to hold the filling.
