Chicken Skewers with Mango Salsa

For the Chicken Skewers:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 tbsp olive oil

2 tbsp soy sauce

1 tbsp honey

1 tsp garlic powder

1 tsp paprika

1/2 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

For the Mango Salsa:

1 large ripe mango, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced (optional for heat)

Juice of 1 lime

2 tbsp fresh cilantro, chopped

Salt, to taste

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together the olive oil, soy sauce, honey, garlic powder, paprika, cumin, salt, and black pepper. Add the cubed chicken, ensuring it's well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Mango Salsa: In another bowl, combine the diced mango, red onion, red bell pepper, jalapeño (if using), lime juice, and chopped cilantro. Season with salt to taste. Mix gently and set aside to allow the flavors to meld while you prepare the skewers.

      Skewer the Chicken: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken pieces onto the skewers, ensuring there is minimal space between each piece for even cooking.

        Grill the Skewers: Lightly oil the grill grates. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve them hot, accompanied by the fresh mango salsa on the side or spooned over the top.
