Chicken Skewers with Cherry Salsa

For the Chicken Skewers:

1 lb chicken breast, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper, to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)

For the Cherry Salsa:

1 cup fresh cherries, pitted and chopped

½ small red onion, finely diced

1 jalapeño pepper, seeded and minced (optional for heat)

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, combine olive oil, soy sauce, honey, minced garlic, paprika, cumin, salt, and pepper. Whisk until well blended.

      - Add the cubed chicken breast to the bowl and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

        Prepare the Cherry Salsa:

          - In a separate bowl, mix together the chopped cherries, red onion, jalapeño (if using), cilantro, lime juice, and a pinch of salt. Stir well and set aside to allow the flavors to meld.

            Assemble the Skewers:

              - After marinating, preheat the grill to medium-high heat.

                - Thread the marinated chicken pieces onto the skewers, leaving a bit of space between each piece for even cooking.

                  Cook the Skewers:

                    - Grill the chicken skewers for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

                      Serve:

                        - Remove the skewers from the grill and let them rest for a couple of minutes.

                          - Serve warm, topped with the fresh cherry salsa.
