2 lbs beef sirloin, cut into 1-inch cubes

1 cup fresh cherries, pitted and halved

1/2 cup cherry juice (unsweetened)

1/4 cup balsamic vinegar

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley or mint for garnish

Marinate the Beef: In a large bowl, whisk together cherry juice, balsamic vinegar, honey, soy sauce, Dijon mustard, minced garlic, and grated ginger. Add salt and pepper to taste. Place the beef cubes in the marinade, making sure they are well-coated. Cover and refrigerate for at least 2 hours, or overnight for more intense flavor.

    Prepare the Glaze: In a saucepan over medium heat, combine the remaining cherry juice, honey, and balsamic vinegar. Bring to a simmer and reduce for about 10-15 minutes until it thickens slightly. Add the halved cherries and cook for an additional 5 minutes. Remove from heat and set aside.

      Cook the Beef: Heat olive oil in a large skillet or grill pan over medium-high heat. Remove the beef from the marinade, allowing excess marinade to drip off. Sear the beef cubes in batches, cooking for about 5-7 minutes or until they are browned and cooked to your desired doneness.

        Combine: Once all the beef is cooked, return it to the pan. Pour the cherry glaze over the beef and toss gently to coat, allowing the flavors to meld together for about 3-4 minutes.
