Cheesy Spinach Breakfast Wraps

4 large whole wheat tortillas

2 cups fresh spinach, chopped

1 cup shredded cheddar cheese

1 cup scrambled eggs (about 4 large eggs)

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Optional: salsa or hot sauce for serving

Instructions
 

Prepare the Spinach: In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and set aside.

    Make the Egg Mixture: In a medium bowl, whisk the eggs along with garlic powder, onion powder, salt, and pepper. In a separate bowl, mix the ricotta and Parmesan cheese until well combined. Set aside.

      Scramble the Eggs: In the same skillet used for the spinach, pour the whisked eggs and scramble them over medium heat until fully cooked and fluffy. Stir in the wilted spinach and remove from heat.

        Assemble the Wraps: On each tortilla, spread a tablespoon of the ricotta mixture evenly over the surface. Add a portion of the scrambled egg and spinach mixture, then top with shredded cheddar cheese.

          Wrap It Up: Fold in the sides of the tortilla and roll it tightly from the bottom up to form a wrap.

            Toast the Wraps: In the same skillet, place the wraps seam-side down and toast for about 2-3 minutes until golden brown. Flip and toast the other side for another 2-3 minutes. You can add a bit more olive oil if needed for extra crispiness.
