Cheesy Roasted Broccoli Grilled Cheese

2 cups fresh broccoli florets

2 tablespoons olive oil

Salt and pepper, to taste

4 slices of sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

4 tablespoons butter, softened

2 tablespoons mayonnaise (for extra creaminess)

Instructions
 

Roast the Broccoli:

    - Preheat your oven to 425°F (220°C).

      - Toss the broccoli florets in a bowl with olive oil, salt, and pepper until evenly coated.

        - Spread the broccoli in a single layer on a baking sheet.

          - Roast in the preheated oven for about 15 minutes, or until the florets are tender and slightly caramelized. Remove from the oven and let cool slightly.

            Prepare the Cheese Mixture:

              - In a medium bowl, combine the shredded cheddar and mozzarella cheeses, garlic powder, and red pepper flakes (if using). Mix well to properly combine the flavors.

                Assemble the Sandwiches:

                  - Spread mayonnaise on one side of each slice of sourdough bread.

                    - On the non-mayo side of two slices, layer a generous amount of the cheese mixture followed by the roasted broccoli.

                      - Top with the remaining cheese mixture, then place the other slices of bread on top, mayo side facing out.

                        Grill the Sandwiches:
