8 oz (225 g) rotini or penne pasta

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup sliced pepperoni

2 cups marinara sauce

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

1/2 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

1/4 cup chopped fresh basil (for garnish)

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, boil salted water and cook the rotini or penne according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until softened.

        Combine Ingredients: To the skillet, add the sliced pepperoni, cooked pasta, marinara sauce, Italian seasoning, and red pepper flakes (if using). Stir everything well until the pasta is evenly coated with the sauce. Season with salt and pepper to taste.

          Layer the Bake: In a greased 9x13-inch (3-liter) baking dish, spread half of the pasta mixture evenly. Sprinkle half of the Parmesan cheese and a third of the mozzarella cheese on top. Layer the remaining pasta mixture and top with the rest of the mozzarella and Parmesan cheeses.

            Bake: Cover the baking dish with aluminum foil (to prevent burning) and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
