Cheesy Ground Turkey Casserole

1 lb ground turkey

1 cup uncooked elbow macaroni

1 cup diced bell pepper (any color)

1 small onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, drained

1 cup corn (fresh or frozen)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup chicken broth

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    Cook the elbow macaroni according to package instructions until al dente, then drain and set aside.

      In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they begin to soften.

        Add the minced garlic and ground turkey to the skillet. Cook until the turkey is browned and cooked through, breaking it up into smaller pieces as it cooks.

          Stir in the diced tomatoes, corn, cooked macaroni, chicken broth, Italian seasoning, and season with salt and pepper to taste. Mix everything together until well combined and heated through.

            Transfer the mixture to a greased 9x13 inch casserole dish. Spread it evenly across the dish.

              Top with cheeses: Sprinkle the shredded cheddar and mozzarella cheese evenly over the top of the turkey mixture.

                Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the edges are slightly golden.

                  Once baked, remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley, if desired.
