Cheesy Ground Beef Rice Skillet

1 lb ground beef

1 medium onion, diced

3 cloves garlic, minced

1 cup uncooked long-grain white rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes, undrained

1 cup frozen corn

1 teaspoon chili powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

¼ cup fresh cilantro, chopped (for garnish)

Optional: sliced jalapeños for topping

Instructions
 

Sauté Aromatics: In a large skillet, over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.

    Add Onions and Garlic: Add the diced onion and minced garlic to the skillet. Sauté for an additional 3-4 minutes until the onions are translucent and fragrant.

      Incorporate Rice: Stir in the uncooked rice, making sure it gets coated with the beef and onion mixture, cooking for 1-2 minutes.

        Add Liquids and Seasonings: Pour in the beef broth and the can of diced tomatoes (with juices). Add the frozen corn, chili powder, smoked paprika, salt, and pepper. Stir well to combine.

          Simmer: Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.

            Cheese it Up: Once the rice is tender, remove the skillet from heat and sprinkle the shredded cheddar cheese evenly over the top. Cover and let it sit for 5 minutes to allow the cheese to melt.
