Ingredients

2 cups fresh broccoli florets

1 cup diced cooked ham

1 cup cooked rice (white or brown)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 can (10.5 oz) cream of mushroom soup (or any cream soup)

1/2 cup milk

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1/2 cup breadcrumbs (optional, for topping)

1 tablespoon olive oil or melted butter (for breadcrumbs)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook Broccoli: In a medium pot of boiling water, blanch the broccoli florets for about 3-4 minutes until bright green and slightly tender. Drain and set aside.

Mix Ingredients: In a large mixing bowl, combine the diced ham, cooked rice, blanched broccoli, cheddar cheese, mozzarella cheese, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Mix until all ingredients are well incorporated.

Transfer to Casserole Dish: Grease a 9x13 inch casserole dish with a bit of olive oil or cooking spray. Pour the mixture into the dish and spread it evenly.

Prepare Breadcrumb Topping (Optional): In a small bowl, mix breadcrumbs with olive oil or melted butter until well coated. Sprinkle this mixture evenly over the casserole.

Bake: Cover the casserole with aluminum foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the top is golden brown and the casserole is bubbly.

Cool and Serve: Once done, remove the casserole from the oven and let it cool for about 5 minutes. Serve warm, garnished with fresh parsley if desired.
