2 cups cooked chicken, shredded

3 cups fresh broccoli florets (or frozen)

1 cup cooked brown rice (or white rice)

2 cups shredded cheddar cheese

1 cup cream of mushroom soup

1/2 cup milk

1/2 cup plain Greek yogurt (for creaminess)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt (or to taste)

1/2 cup breadcrumbs (optional for topping)

2 tablespoons olive oil (for greasing)

Instructions
 

Preheat your oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking dish with olive oil to prevent sticking.

    Prepare the broccoli: If using fresh broccoli, blanch the florets in boiling water for 2-3 minutes until bright green and slightly tender. Drain and transfer them to an ice bath to halt cooking. If using frozen, simply thaw them.

      Mix the filling: In a large mixing bowl, combine the shredded chicken, cooked rice, blanched broccoli, 1 1/2 cups of the cheddar cheese, cream of mushroom soup, milk, Greek yogurt, garlic powder, onion powder, black pepper, and salt. Stir until all the ingredients are well incorporated.

        Assemble the casserole: Pour the mixture into the greased baking dish and spread it evenly.

          Add topping: If desired, sprinkle the remaining 1/2 cup of cheddar cheese on top of the mixture. For added crunch, you can also sprinkle breadcrumbs over the cheese.
