Cheesy Broccoli and Chicken Casserole

2 cups cooked chicken, shredded or diced

4 cups broccoli florets (fresh or frozen)

1 cup cooked rice (white or brown)

1 can (10.5 oz) cream of mushroom soup

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

1 teaspoon salt (adjust to taste)

1 ½ cups shredded cheddar cheese (divided)

½ cup grated Parmesan cheese

1 cup crispy fried onions (for topping, optional)

Fresh parsley (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, steam or blanch it in boiling water for about 3-4 minutes until bright green and tender-crisp. If using frozen, simply thaw and drain excess water.

      Mix the Base: In a large mixing bowl, combine the cooked chicken, broccoli, cooked rice, cream of mushroom soup, chicken broth, garlic powder, onion powder, black pepper, and salt. Stir until all the ingredients are well combined.

        Add Cheese: Fold in 1 cup of shredded cheddar cheese and all the grated Parmesan cheese, mixing until the cheese is evenly distributed throughout the mixture.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

            Top with Cheese: Sprinkle the remaining ½ cup of shredded cheddar cheese evenly over the top of the casserole.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the edges are bubbly and the cheese on top is melted and slightly golden.

                Add Crispy Onions (Optional): If using, remove the casserole from the oven and sprinkle crispy fried onions on top. Return to oven and bake for an additional 5 minutes until the onions are golden and crispy.
