Cheesy Beef and Rice Casserole

1 pound ground beef

1 cup uncooked long-grain rice

1 can (10.5 oz) cream of mushroom soup

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

1 onion, finely chopped

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent, then add the ground beef. Cook, breaking it apart with a spatula, until browned and cooked through. Drain any excess fat.

      Mix Ingredients: In a large mixing bowl, combine the cooked beef, uncooked rice, cream of mushroom soup, diced tomatoes (with their juice), beef broth, garlic powder, onion powder, salt, and pepper. Stir well until all ingredients are incorporated.

        Add Veggies and Cheese: Gently fold in the frozen mixed vegetables and half of the shredded cheddar cheese into the mixture.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it out evenly.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

              Add Remaining Cheese: After 45 minutes, remove the foil and sprinkle the remaining cheddar cheese on top. Return the casserole to the oven and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.
