Ingredients

1 pound ground beef

2 cups fresh broccoli florets (or frozen, thawed)

1 cup long-grain white rice

2 cups beef broth

1 cup shredded cheddar cheese (plus more for topping)

1 cup sour cream

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon paprika

1 tablespoon olive oil

1/4 cup grated Parmesan cheese (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces, about 5-7 minutes. Drain the excess fat.

Add Seasonings: Stir in the garlic powder, onion powder, black pepper, salt, and paprika. Cook for another 2 minutes until the spices are fragrant.

Prepare Rice and Broccoli: In a large bowl, combine the cooked beef, broccoli florets, uncooked rice, beef broth, soy sauce, sour cream, and shredded cheddar cheese (reserve some cheese for topping). Mix well until the ingredients are evenly distributed.

Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it out evenly.

Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes.

Add Toppings and Finish Baking: Remove the foil, sprinkle the reserved cheddar cheese (and Parmesan if using) over the top, and return to the oven. Bake uncovered for another 15-20 minutes, or until the cheese is bubbly and golden.

Cool and Serve: Once baked, let the casserole sit for about 5 minutes before serving. This will help it set a bit and make it easier to serve.

Enjoy: Serve warm, garnished with additional broccoli or cheese if desired!
