8 oz elbow macaroni

6 slices of bacon, chopped

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon mustard powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni until al dente (check package instructions, usually around 7-8 minutes). Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and let it drain on paper towels. Leave about 2 tablespoons of bacon drippings in the skillet.

      Make the Cheese Sauce: In the same skillet with the bacon drippings, melt the butter over medium heat. Once melted, whisk in the flour, cooking for about 1 minute to form a roux. Gradually whisk in the milk, ensuring no lumps form. Bring the mixture to a simmer, stirring frequently until it thickens slightly, about 3-5 minutes.

        Add Cheese and Seasoning: Remove the skillet from heat and stir in the shredded cheddar cheese and mozzarella until melted and smooth. Add garlic powder, mustard powder, smoked paprika, and season with salt and pepper to taste.
