1 tablespoon olive oil

Prep the Vegetables: Start by washing all your vegetables thoroughly. Slice the bell peppers, zucchini, and red onion, and halve the cherry tomatoes. Trim the snap peas and set everything aside in separate bowls for easy access.

    Make the Stir-Fry Sauce: In a small bowl, whisk together the soy sauce, sesame oil, honey (if using), grated ginger, and red pepper flakes. Set this sauce mixture aside to allow the flavors to meld.

      Heat the Pan: In a large skillet or wok, heat the olive oil over medium-high heat. Once hot, add the sliced red onion and sauté for about 1-2 minutes until it begins to soften.

        Add Remaining Vegetables: Add the bell peppers, zucchini, and snap peas to the skillet. Stir-fry these vegetables for about 5 minutes, or until they are vibrant and slightly tender but still crisp.

          Incorporate Garlic and Tomatoes: Push the vegetables to one side of the pan, and add the minced garlic and halved cherry tomatoes to the empty space. Allow them to cook for about 1 minute until fragrant, then mix everything together.
