Carrot Cake Bliss Balls

Ingredients
  

1 cup grated carrots (about 2 medium carrots)

1 cup rolled oats

1 cup almond flour

1/2 cup pitted dates, soaked in warm water for 10 minutes

1/4 cup walnuts, chopped

1/4 cup shredded unsweetened coconut

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp sea salt

1 tsp vanilla extract

Optional: 1/4 cup maple syrup or honey (for extra sweetness)

Extra shredded coconut or crushed walnuts for rolling

Instructions
 

In a food processor, combine the soaked dates and grated carrots. Pulse until smooth.

    Add the rolled oats, almond flour, walnuts, shredded coconut, ground cinnamon, nutmeg, sea salt, and vanilla extract to the food processor. If you prefer a sweeter bite, add maple syrup or honey at this stage.

      Pulse everything together until the mixture is well-combined and sticky. If the mixture is too dry, add a teaspoon of water or more maple syrup to help it stick together.

        Once the mixture reaches a dough-like consistency, take small portions (about one tablespoon each) and roll them into balls using your palms.

          Roll the bliss balls in either extra shredded coconut or crushed walnuts for a nice texture.

            Place the finished bliss balls on a baking sheet lined with parchment paper.

              Refrigerate for at least 30 minutes to firm them up and enhance the flavors. You can also keep them in an airtight container in the fridge for up to a week, or freeze for longer storage.
