Buttery Mashed Sweet Potatoes with Thyme

2 large sweet potatoes (about 2 lbs), peeled and cubed

4 tablespoons unsalted butter, plus more for garnish

1/4 cup heavy cream (or milk for a lighter option)

1 teaspoon fresh thyme leaves, finely chopped (plus extra for garnish)

Salt and pepper to taste

A sprinkle of cinnamon (optional)

Instructions
 

Prepare the Sweet Potatoes: Start by peeling and cubing the sweet potatoes into even chunks (about 1-2 inches). This helps them to cook evenly.

    Boil the Potatoes: Place the cubed sweet potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes, or until the sweet potatoes are fork-tender.

      Drain and Steam Dry: Once cooked, drain the sweet potatoes and return them to the pot. Allow them to steam dry for about 2-3 minutes over low heat to help remove excess moisture.

        Mash the Sweet Potatoes: Add the butter to the warm sweet potatoes, and using a potato masher or a ricer, mash until smooth and creamy.

          Add Cream and Thyme: Pour in the heavy cream, followed by the chopped thyme. Mix until fully incorporated. Taste and season with salt, pepper, and a sprinkle of cinnamon if desired. Adjust the cream and butter to your preferred consistency and richness.

            Serve: Transfer the mashed sweet potatoes to a serving bowl. Top with an extra pat of butter and a few sprigs of fresh thyme for garnish. Serve warm and enjoy!
