1 cup rolled oats

1 ½ cups almond milk (or milk of your choice)

1 cup fresh or frozen blueberries

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

¼ teaspoon ground cinnamon

¼ teaspoon sea salt

½ cup Greek yogurt (optional)

For the Crumble Topping:

½ cup old-fashioned oats

¼ cup almond flour

2 tablespoons coconut oil (melted)

2 tablespoons brown sugar (or coconut sugar)

½ teaspoon ground cinnamon

¼ teaspoon sea salt

Instructions
 

Prepare the Base: In a medium-sized mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, ground cinnamon, and sea salt. Stir well until all the ingredients are fully mixed.

    Add the Blueberries: Gently fold in the blueberries to the oatmeal mixture. If using frozen blueberries, don’t worry about them breaking apart; they will thaw and blend in nicely overnight.

      Prep the Crumble Topping: In a separate bowl, mix together the old-fashioned oats, almond flour, melted coconut oil, brown sugar, ground cinnamon, and sea salt. Use your hands or a fork to create a crumbly texture.

        Combine and Refrigerate: Divide the oatmeal mixture into two jars or containers, leaving some room at the top. Sprinkle a layer of the crumble topping over each jar.
