1/4 cup sour cream

1/4 cup heavy cream

1/3 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 tablespoon water

1 cup old-fashioned oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup unsalted butter, softened

1/2 teaspoon ground cinnamon

Prepare the Crust:

    - Preheat your oven to 325°F (163°C).

      - In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes. Remove from the oven and let it cool.

          Make the Cheesecake Filling:

            - In a large bowl, mix the softened cream cheese until smooth. Gradually add the granulated sugar and mix until well combined.

              - Add the vanilla extract, then incorporate the eggs one at a time, mixing on low speed after each addition until just combined.
