4 boneless skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/2 cup balsamic vinegar

2 tablespoons honey

1 tablespoon Dijon mustard

Fresh basil leaves, for garnish

Instructions
 

Prep the Chicken: Pat the chicken breasts dry and season both sides with garlic powder, onion powder, thyme, salt, and pepper.

    Heat the Skillet: In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, add the balsamic vinegar, honey, and Dijon mustard. Stir well and scrape up any browned bits from the bottom of the skillet. Bring to a gentle simmer and let it reduce for about 3-4 minutes, until slightly thickened.

        Add Vegetables: Add the halved cherry tomatoes and fresh spinach to the skillet. Cook for an additional 2-3 minutes until the spinach is wilted and the tomatoes are softened.

          Combine and Serve: Return the chicken to the skillet, spooning the balsamic sauce and vegetables over the top. Cook for another minute to warm everything through. Remove from heat.
