Ingredients

2 medium sweet potatoes, peeled and sliced into thin strips

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, sliced

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, for garnish

Tortillas, for serving

Instructions

Preheat your oven to 425°F (220°C).

Prepare the seasoning: In a small bowl, combine the chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Set aside.

Toss the veggies and chicken: In a large mixing bowl, combine the sliced sweet potatoes, chicken strips, bell peppers, and onion. Drizzle with olive oil and lime juice. Sprinkle the seasoning mix over the top and toss everything until evenly coated.

Spread on a baking sheet: Line a large baking sheet with parchment paper for easy clean-up. Spread the fajita mixture evenly on the prepared baking sheet, ensuring the chicken and vegetables are in a single layer.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the sweet potatoes are tender and the chicken is cooked through. Stir halfway through the cooking time to ensure even roasting.

Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro. Serve the fajita mixture in warm tortillas, and add your favorite toppings like avocado, salsa, or cheese, if desired.

Enjoy your meal with family or friends, and savor the delicious flavors!
