4 boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 cups fresh spinach

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Optional: red pepper flakes, for extra heat

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Chicken: Pat the chicken breasts dry with paper towels and place them on the sheet pan. Drizzle with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the seasonings all over the chicken to ensure even coating.

      Add Veggies: In a mixing bowl, combine the fresh spinach and halved cherry tomatoes. Drizzle with balsamic vinegar and a pinch of salt and pepper. Toss gently until the veggies are well coated, then spread them around the chicken on the sheet pan.

        Bake the Chicken: Place the sheet pan in the preheated oven and bake for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
