Baked Meatloaf Muffins with Mashed Potato Topping

For the Meatloaf Muffins:

1 lb ground beef (or turkey for a leaner option)

1 cup breadcrumbs

1/2 cup onion, finely chopped

1/4 cup milk

1/4 cup ketchup (plus more for topping)

1 large egg

2 cloves garlic, minced

1 tsp Worcestershire sauce

1 tsp Italian seasoning

Salt and pepper to taste

For the Mashed Potato Topping:

2 large russet potatoes, peeled and cubed

1/4 cup unsalted butter

1/4 cup heavy cream (or milk for a lighter version)

Salt and pepper to taste

Optional: Chives or parsley for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.

    Make the Meatloaf Mixture: In a large mixing bowl, combine ground beef, breadcrumbs, finely chopped onion, milk, ketchup, egg, minced garlic, Worcestershire sauce, Italian seasoning, and season with salt and pepper. Mix well until all ingredients are fully incorporated.

      Fill the Muffin Tin: Spoon the meatloaf mixture into the greased muffin tins, filling each cup about 3/4 full. They will shrink slightly as they cook.

        Add Ketchup on Top: For an extra layer of flavor, add a small dollop of ketchup on top of each meatloaf muffin.

          Bake the Meatloaf Muffins: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the meatloaf muffins are cooked through and browned on top. Use a meat thermometer for internal temperature (should reach 160°F/70°C for beef).

            Prepare Mashed Potatoes: While the meatloaf muffins are baking, place the cubed potatoes in a pot of salted water. Bring to a boil and cook until potatoes are tender, about 15-20 minutes.

              Mash the Potatoes: Drain the potatoes and return them to the pot. Add the butter and heavy cream. Mash until smooth and creamy. Season with salt and pepper to taste.

                Top the Muffins: Once the meatloaf muffins are done baking, remove them from the oven. Pipe or spoon the creamy mashed potatoes on top of each muffin.

                  Finish Baking: Return the muffin tin to the oven for an additional 5-10 minutes until the potato topping is slightly golden.
