Baked Broccoli Cheddar Quinoa Cups

1 cup quinoa, rinsed and drained

2 cups vegetable broth

2 cups fresh broccoli florets, finely chopped

1 cup sharp cheddar cheese, shredded (plus more for topping)

1/2 cup grated Parmesan cheese

2 large eggs

1/4 cup milk (or dairy-free alternative)

1 clove garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/4 cup breadcrumbs (optional, for extra crunch)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with olive oil spray or use silicone liners.

    Cook Quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool slightly.

      Prepare Broccoli: While the quinoa is cooking, steam the chopped broccoli for about 3-4 minutes until tender but still bright green. Drain and set aside.

        Mix Ingredients: In a large mixing bowl, combine the cooked quinoa, steamed broccoli, shredded cheddar, grated Parmesan, eggs, milk, minced garlic, onion powder, paprika, salt, and pepper. Stir well until fully combined.

          Fill Muffin Tin: Spoon the quinoa mixture into the prepared muffin tin. You can fill them generously to create a nice dome shape. If desired, sprinkle a little extra cheese and breadcrumbs on top for a crispy finish.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and set.

              Cool and Serve: Once baked, remove the quinoa cups from the oven and let them cool in the tin for about 5 minutes. Carefully run a knife around the edges to loosen them, then transfer to a cooling rack.
