1 cup cooked chicken breast, shredded or diced

1 ripe avocado, mashed

1/4 cup plain Greek yogurt (or mayonnaise)

1 tablespoon Dijon mustard

1 tablespoon lime juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cumin

Salt and pepper to taste

1/2 cup diced bell pepper (any color)

1/4 cup chopped fresh cilantro

4 large whole wheat tortillas

1 cup baby spinach or mixed greens

Prepare the Chicken Mixture: In a medium mixing bowl, combine the shredded chicken, mashed avocado, Greek yogurt (or mayonnaise), Dijon mustard, lime juice, garlic powder, onion powder, cumin, salt, and pepper. Mix until well-blended and creamy.

    Add Vegetables: Gently fold in the diced bell pepper and chopped cilantro to the chicken salad mixture, ensuring that the ingredients are evenly distributed.

      Assemble the Pinwheels: Lay one tortilla flat on a clean surface. Place a handful of baby spinach (or mixed greens) in the center of the tortilla, leaving a small border around the edges.

        Spread the Filling: Spoon a generous portion of the avocado chicken salad mixture over the spinach, spreading it evenly across the tortilla.

          Roll It Up: Starting from one edge, carefully roll the tortilla away from you, tucking in the filling as you go, to create a tight cylinder. Make sure not to overfill the tortilla, or it may break.

            Slice and Serve: Using a sharp knife, slice the rolled tortilla into about 1-inch wide pinwheels. Repeat with the remaining tortillas and filling. Arrange the pinwheels on a serving platter and enjoy!
