Ingredients

For the Apple Pie Muffins:

2 cups all-purpose flour

1 cup granulated sugar

1 tbsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

1 large egg

1 cup buttermilk

½ cup unsalted butter, melted

2 cups peeled, diced apples (preferably Granny Smith)

For the Cream Cheese Filling:

8 oz cream cheese, softened

¼ cup powdered sugar

1 tsp vanilla extract

½ tsp ground cinnamon

For Topping:

¼ cup brown sugar

1 tbsp melted butter

1 tsp ground cinnamon

Instructions

Preheat your oven: Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.

Mix dry ingredients: In a large bowl, sift together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.

Combine wet ingredients: In a separate bowl, whisk together the egg, buttermilk, and melted butter until well combined.

Combine mixtures: Gradually add the wet mixture to the dry mixture, stirring gently until just combined (be careful not to overmix). Fold in the diced apples evenly.

Fill muffin tin: Divide the batter evenly among the muffin compartments, filling each about two-thirds full.

Prepare topping: In a small bowl, combine the brown sugar, melted butter, and ground cinnamon, then sprinkle this mixture evenly over the top of each muffin.

Bake: Bake in the preheated oven for 18-20 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack.

Make cream cheese filling: In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and ground cinnamon together until smooth and creamy.

Assemble sandwiches: Once the muffins have cooled, cut them in half horizontally. Spread a generous layer of the cream cheese filling on the bottom half of each muffin, then place the top half back on.

Serve: Enjoy your delicious Apple Pie Muffin Sandwiches warm or at room temperature, perfect for breakfast or a snack!
