1 3/4 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted

2 large eggs

1 cup milk

2 teaspoons vanilla extract

2 cups peeled, cored, and diced apples (Granny Smith or Honeycrisp work well)

1/2 cup brown sugar

1 teaspoon ground cinnamon (for topping)

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt until evenly combined.

      Combine Wet Ingredients: In another bowl, mix the melted butter, eggs, milk, and vanilla extract until smooth and well combined.

        Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.

          Fold in Apples: Gently fold in the diced apples until evenly dispersed throughout the batter.
