Mixing dry and wet ingredients correctly is crucial for a successful bundt cake. Start by ensuring all your ingredients are at room temperature, as this helps them combine more easily. When mixing the dry ingredients—flour, baking powder, baking soda, spices, and salt—sift them together in a bowl to eliminate any lumps and ensure even distribution of the leavening agents.

Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

¾ cup unsalted butter, softened

1 cup granulated sugar

½ cup packed light brown sugar

3 large eggs

1 teaspoon vanilla extract

1 cup apple cider

1 cup peeled and diced apples (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

1 cup powdered sugar (for glaze)

2-3 tablespoons apple cider (for glaze)

Instructions

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan, ensuring all the crevices are well coated to prevent sticking.

Mix the dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

Cream the butter and sugars: In a large mixing bowl, use an electric mixer to beat the softened unsalted butter, granulated sugar, and brown sugar together until light and fluffy, about 3-5 minutes.

Add the eggs and vanilla: Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract until fully combined.

Incorporate the dry ingredients: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the apple cider. Start and end with the dry mixture. Mix until just combined—do not overmix.

Fold in the apples and nuts: Gently fold in the diced apples and chopped walnuts or pecans, ensuring an even distribution throughout the batter.

Pour into the Bundt pan: Carefully pour the batter into the prepared Bundt pan, smoothing the top with a spatula.

Bake the cake: Bake for approximately 50-60 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool in the pan for about 10-15 minutes.

Cool and glaze: After cooling in the pan, invert the cake onto a wire rack to cool completely. In a small bowl, mix the powdered sugar with 2-3 tablespoons of apple cider until smooth. Drizzle the glaze over the cooled Bundt cake.

Serve and enjoy: Slice your Apple Cider Bundt Cake and serve it with a cup of warm cider or a dollop of whipped cream for a truly autumnal dessert!
