1 lb chicken breast, boneless and skinless, cut into bite-sized pieces

1 cup buttermilk

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

1 cup all-purpose flour

1/2 cup grated Parmesan cheese

1 cup panko breadcrumbs

3 tbsp olive oil

2 cloves garlic, minced

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the buttermilk, garlic powder, onion powder, paprika, black pepper, and salt. Add the chicken pieces and stir well to coat. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for extra flavor).

    Prepare the Breading: In three separate shallow dishes, set up your breading stations. In the first dish, place the flour. In the second dish, combine panko breadcrumbs and grated Parmesan cheese. In the third dish, beat an egg (optional, for extra crispiness).

      Coat the Chicken: Remove the marinated chicken from the fridge. One piece at a time, take a piece of chicken and coat it first in flour, shaking off any excess. Then dip it into the egg (if using), and finally, coat it well with the panko and Parmesan mixture. Place the coated chicken bites on a plate.

        Preheat the Air Fryer: Set your air fryer to preheat at 400°F (205°C) for about 5 minutes.

          Air Fry the Chicken Bites: Lightly brush the air fryer basket with olive oil to prevent sticking. Place a single layer of chicken bites in the basket, making sure they are not overcrowded. Spray or lightly brush the tops with olive oil. Air fry for 10 minutes, flipping halfway through, until they are golden brown and crispy.

            Sauté the Garlic: While the chicken is frying, in a small pan, heat 1 tbsp of olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant and golden, but not burnt.

              Toss with Garlic Oil: Once the chicken bites are done, transfer them to a large mixing bowl. Drizzle the sautéed garlic and oil over the chicken, tossing well to coat them evenly.

                Garnish and Serve: Sprinkle chopped fresh parsley over the chicken bites for a pop of color and flavor. Serve warm with your favorite dipping sauce!
