2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

2 cups vegetable or chicken broth

1 teaspoon sugar (optional)

1 teaspoon dried basil or 1/4 cup fresh basil, chopped

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper

1 cup heavy cream (or coconut milk for a dairy-free option)

Fresh basil leaves for garnish

Crusty bread or grilled cheese sandwiches (for serving)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until they become translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Tomatoes & Broth: Pour in the crushed tomatoes and vegetable or chicken broth. If desired, add sugar to balance the acidity of the tomatoes.

      Season the Soup: Stir in the dried basil (or fresh if using later), salt, and black pepper. Bring the mixture to a simmer, then reduce the heat and let it simmer for about 10 minutes to allow the flavors to meld.

        Blend for Creaminess: Using an immersion blender (or carefully transferring to a traditional blender in batches), blend the soup until smooth. If you prefer a chunkier texture, only blend half of it.

          Stir in Cream: Return the blended soup to the pot (if you used a traditional blender) and stir in the heavy cream (or coconut milk). Warm through for another 3-5 minutes on low heat, making sure not to bring it back to a boil.

            Finish and Serve: Taste and adjust seasoning if needed. If you used fresh basil, stir it in now. Ladle the soup into bowls and garnish with torn basil leaves. Serve hot with crusty bread or alongside delicious grilled cheese sandwiches.
